At this time of the year the idea of coming in after a day in the garden to a good salad does not keep you going but a good bowl of soup seems the right thing to end a day with and pumpkins do make a great soup. On the weekend I roasted pumpkin, carrot and parsnips blended and them, added spices and vegetable stock, what a great soup it made and to have a good heap of pumpkins makes the idea of more soup something to look forward to.

  2. Did a variation and used butternut squash as had no pumpkin. Delicious! Thanks for the tip, I’d never made roast vegetable soup before, but it will be a firm favourite from now on! 🙂
